Mint Chocolate Chip Cookies

Ingredients:

2 1//2 cups of flour
1 1/2 tablespoons baking powder
3/4 teaspoons salt
1 cup of sugar
3/4 cup vegetable oil
2 eggs
1 teaspoon vanilla
1 10 oz. bag Andes mint chocolate chips

Directions:

Heat oven to 350°.
Combine the first 3 ingredients, mix and set aside.

The BEST Pad Thai!

Most Pad Thai recipes are pretty much the same but we have experimented quite a bit and this so far is the best damn Pad Thai we can come up with. We use Tamarind nectar in this recipe instead of tamarind since we have been unsuccessful finding it locally.

Pumpkin Bread

Ingredients:

3 1/2 cup of flour
2 teaspoon of soda
1 1/2 teaspoon of salt
5 teaspoon of cinnamon
2 teaspoon of pumpkin pie spice
3 cup of sugar
1 cup of salad oil
4 eggs
2 cups of pumpkin
2/3 cup of water

Directions:

Chicken Cordon Bleu

We love this dish!! It is served best over a bed of Jasmine rice with a side of broccoli or asparagus. Pour the sauce over the chicken/rice bed and over the vegetables. This is a gourmet dish that the whole family will love!!!

Mexican-style Meatloaf

We plated this with some fantastic garlic mashed potatoes and steamed carrots and green beans and garnished with just a pinch of fresh chopped cilantro. It is one of our family faves! Leftovers make great sammys too!

Ingredients:

2 lbs ground beef or turkey burger
1 lb bulk Hot Italian Sausage (turkey or pork sausage)
1 (15 ounce) can black beans, drained
1 (15 ounce) can kidney beans, drained
2 (15 ounce) cans chili beans
2 (28 ounce) cans diced tomatoes with juice
1 (6 ounce) can tomato paste
1 large yellow onion, chopped

Candy Cane Cookies

INGREDIENTS

1 cup margarine
1/2 cup white sugar
1/2 cup confectioners’ sugar
1 egg
1 teaspoon vanilla extract
1/2 teaspoon peppermint extract
2 1/2 cups all-purpose flour
