Firecracker Chili

Vespoli Chili

Ingredients:

  • 2 lbs ground beef or turkey burger
  • 1 lb bulk Hot Italian Sausage (turkey or pork sausage)
  • 1 (15 ounce) can black beans, drained
  • 1 (15 ounce) can kidney beans, drained
  • 2 (15 ounce) cans chili beans
  • 2 (28 ounce) cans diced tomatoes with juice
  • 1 (6 ounce) can tomato paste
  • 1 large yellow onion, chopped
  • 4 stalks celery, chopped
  • 2 green bell peppers, seeded and chopped
  • 1 red bell pepper, seeded and chopped
  • 2 jalapeƱo peppers, chopped
  • 2 tbsp real bacon bits
  • 4 cubes of beef bouillon
  • 1 can/bottle of beer
  • 1/4 c. chili powder
  • 1 tbsp Worcestershire sauce
  • 3 tbsp minced garlic
  • 1 tbsp dried oregano
  • 2 tsp ground cumin
  • 2 tsp hot pepper sauce (e.g. Tabasco)
  • 1 tsp dried basil
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1 tsp cayenne pepper
  • 1 tsp paprika
  • 1 tsp white sugar
  • 1 bag of Fritos
  • 1 (8 ounce) package of shredded cheese, Mexican blend

Directions:

  1. Heat a large stock pot over medium-high heat. Crumble the ground beef and/or turkey and sausage into the hot pan and cook until evenly browned. Drain off the excess grease.
  2. Pour in all of your beans, diced tomatoes and tomato paste. Add the onion, celery, green and red bell peppers, chile peppers, bacon bits, bouillon, and beer. Season with chili powder, garlic, oregano, Worcestershire sauce, cumin, basil, hot pepper sauce, salt, pepper, ceyenne, paprika, and sugar. Stir to blend, then cover and simmer over low/medium heat for at least 2 hours, stirring occasionally.
    • NOTE: Sauce will start out VERY thick. Cooking will break it down to very liquid sauce then it will thicken with time. 2 hours should be your MINIMUM cooking time.
  3. After 2 hours, taste, and adjust salt, pepper, and chili powder if necessary. The longer the chili simmers, the better it will taste.
  4. Remove from heat and serve, or refrigerate, and serve the next day.
  5. To serve: Ladle into bowls. Top with Fritos and shredded cheese.
